Easy chicken enciladas

This dish saved my day, better yet id actually MADE my day...You know sometimes how you forget to take the meat out of the freezer...yea I was having one of those nights...anywho here is the recipe...

8oz cream cheese
1 cup salsa
2 cups chopped chicken breast
1 can pinto beans
Flour tortillas 8-10
2 cups colby jack cheese

Preheat oven to 350, lightly grease 9x13 pan, in a small saucepan, combine cream cheese and salsa, when melted and well blended add the chicken, put the chicken mixture into tortillas, place in pan, cover with 2 cups colby jack cheese and bake covered for 30 minutes...

This was so yummy, and we had leftovers, lunch will be a treat!

Betty's Best Chili

Getting home after 6 stinks... I worked a 10 hour day, ran to my moms to pick up the kid, talked baby shower themes with my sister  and then headed back home only to get in around 7:15! WHAT, it was already 7:15, how does this happen to me (why, cruel world, why) so I had to get dinner done and quickly. Betty to the rescue. I whipped up some chili and saved the day! I even managed to make some chocolate pudding for dessert, the 5 minute kind of course. Who has time for anything other than that. So if you like red chili and you have an instant gratification day, this is it!
Betty's Best Chili


1lb lean ground beef
1 large onion
clove garlic
1 (28oz) can diced tomatoes, undrained
1 can (15oz) tomato sauce
2 tablespoons chili powder
1 1/2 teaspoons ground cumin
1/2 teaspoon salt
1/2 teaspoon pepper
1 can (15oz) kidney beans
Shredded Cheddar and Sour Cream as desired
Crackers (saltines) as desired

1. Brown the Meat
2.in large cooking pot, combine all ingredients except Kidney Beans, Cheese, Sour Cream and Crackers.
3. Cover and Cook over medium heat for around 30 minutes.
4. Stir in beans, increase to high heat and cover 15 minutes.

Serve, Sprinkle with cheese add sour cream and crackers as desired.
Grab your napkins and go!

The Super Chicken Casserole

Last night I was tired, but still hungry. What to do? I tried this awesome casserole. It was so tasty. The only thing I would change would be to add more stuffing mix on the top (the crunchiness is the best!). All in all, this was a great win. It has everything, starch, vegetables, dairy, and protein....how could one go wrong. The best part is, this is an easily improvised meal, if you are missing an ingredient, its SO easy to substitute another in its place.....I guess that's what makes it SUPER!!!
Super Chicken Casserole

Ingredients
  • 1/2 cup Pepperidge Farm® Herb Seasoned Stuffing, crushed
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons butter, melted
  • 1 (10.75 ounce) can Campbell's® Condensed Cream of Broccoli Soup or Campbell's® Condensed 98% Fat Free Cream of Broccoli Soup
  • 1 cup milk
  • 1/2 cup shredded mozzarella cheese
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon ground black pepper
  • 1 cup elbow pasta, cooked and drained
  • 2 cups cubed cooked chicken
  • 1 (10 ounce) package frozen peas and carrots, cooked and drained

Directions

  1. Heat the oven to 400 degrees F. Stir the stuffing, Parmesan cheese and butter in a medium bowl.
  2. Stir the soup, milk, mozzarella cheese, garlic powder and black pepper in a 2-quart baking dish. Stir in the pasta, chicken and peas and carrots.
  3. Bake for 20 minutes or until the chicken mixture is hot and bubbling. Stir the chicken mixture. Sprinkle with the stuffing mixture.
  4. Bake for 5 minutes or until the stuffing mixture is golden brown.

The Mexican Lasagna


This evening, I decided to try something new after 2 days of previous meals leftovers....Enter The Mexican Lasagna.... It was fast to make, and really simple, with only 2 dirty dishes,always a plus on a weeknight, as anyone with kids can tell you. The only thing I would do different next time around is to add more tortillas in the mix, recipe calls for only 2 layers, it would be easy to add more. So all in all this will probably be a go to another night I am tired and just want to make something quick and yummy!

Manicotti

Manicotti
Tonight we made this delicious manicotti recipe and it was simply DELICIOUS! I have already added this to my box!


Ingredients• 1 pint part-skim ricotta cheese
• 8 ounces shredded mozzarella cheese
• 3/4 cup grated Parmesan cheese
• 2 eggs
• 1 teaspoon dried parsley
• salt to taste
• ground black pepper to taste
• 1 (16 ounce) jar spaghetti sauce
• 5 1/2 ounces manicotti pasta



Directions
1. Cook manicotti in boiling water until done. Drain, and rinse with cold water.
2. Preheat oven to 350 degrees F (175 degrees C).
3. In a large bowl, combine ricotta, mozzarella, and 1/2 cup Parmesan, eggs, parsley, and salt and pepper. Mix well.
4. Pour 1/2 cup sauce into an 11x17 inch baking dish. Fill each manicotti shell with 3 tablespoons cheese mixture, and arrange over sauce . Pour remaining sauce over top, and sprinkle with remaining Parmesan cheese.
5. Bake 45 minutes, or until bubbly.
